GARNISHED BEAUTY: Keftedes with microgreens

“I take a minimalist approach to garnish and only use quality products that improve the dish. Since we opened, I have been working with the wonderful team at Edenworks, who run a rooftop aquaponic greenhouse in Brooklyn. All the micro greens are grown sustainably and are delivered alive. This close relationship with the farm allows me to select greens to compliment specific dishes, not just cover them up.”

Small plates may mean less commitment to one dish, but the unique flavors of Adalya and beautifully garnished plates has made a huge impression on BELLA! This is the kind of food that keeps you coming back for more. The Halloumi is simply the best I’ve tasted. The way the kabocha squash melts into it like butter with each bite will make you want to kneel before the Greek gods! But for now, we will praise newcomer Chef Miles with a round of applause for giving us many good reasons to eat well in Gramercy Park. The service was impeccable and the keftedes served intense layers of flavor fit for a goddess on a bed of romaine!
